Cilantro-Lime Rice Pin It

Mmmm! Two of my favorite ingredients… together in one recipe.

Cilantro AND Lime!

Now you know that’s got to be good!

They are BFFs forever in my opinion.

Can’t go wrong!

So let’s get down to business!

Cilantro-Lime Infused Rice


  1. 1 cup of Basmati long grained rice
  2. 1 Tablespoon of butter
  3. 2 small limes juiced
  4. 1/2 teaspoon of sugar
  5. 2 Cups of Water
  6. 3 Tablespoons of cilantro
  7. Add salt to taste


  1. Cover rice with water and let it soak for 10 minutes then drain
  2. In a skillet (low to med heat) add butter, sugar and rice
  3. Let the rice get coated with the butter and sugar mixture
  4. Once you smell the fragrance of the rice add the lime juice
  5. Add 2 cups of water, cover and cook for about 10-15 minutes or until the rice has absorbed all of the water.
  6. Once the rice has soaked up the water remove from heat and stir in cilantro
  7. Let it sit with the cover on to cool down

Serve with Tacos, Quesadillas, Salsa and Chips… you name it this dish is so versatile it goes with EVERYTHING!

Danielle actually brought it to a school luncheon that they had and Jim said “You will love this and I asked for the recipe!”

Gotta love that!

I’m setting up the island in the kitchen with all the fixins so the kids can help themselves.

Sour cream, grated cheese, salsa, chips, black beans, re-fried beans! Uhhh huh!

Jim always makes the Quesadillas too… so once I get the rice done… I can chillax!

That’s why I really like Quesadilla Night! Shhhhhh!
