Three Cheese Tortellini with Balsamic Reduction Pin It

I know… the name sounds like a mouth full… and it is … but easy to make too.

Don’t be intimidated by the name … it’s just a fancy way of saying melted butter, browned with a splash of Balsamic Vinegar.

See… not too tricky!

This is the first of many “Quick” recipes to come and by quick… I mean 30 minutes or under.

When I shop for “dinners” … I always shop by meal. I pick out the main meal and then the side that goes with it.

I normally keep my fridge and pantry stocked with all the staples necessary to prep several meals.

I always have Thin Spaghetti, Baguette, Tomatoes, Lettuce, Extra Virgin Olive Oil, Butter, Cheese, Balsamic Vinegar, Flour, Sea Salt, Pepper, Red Pepper Flakes and Sugar.

You’d be amazed at the various meals you can complete with the above limited items.

This isn’t all that’s in my pantry… but it is my main go-to list that I can’t live without.

OOPS… forgot one… WINE!! CLINK!!

When I go to the store… Attention Wal-Mart Shoppers… I go straight to the produce department.

You’d be surprised… everything you need to make this meal is right there…. right inside the front door.

Even the baguette and wine! BONUS!

I always try to stay right there and down the side of the store where the refrigerated items are.

This I call the FRESH ZONE… and the inside isles are the DANGER ZONES…  filled with PREPACKAGED foods.

Not that I don’t GO there and buy anything from them… I just try to limit them.

SO…. Let’s go SHOPPING!!

Here’s your list:

  • 1 Package FRESH Buitoni Three Cheese Tortellini
  • 1 Baguette (any kind)
  • 1 6 oz bag of Shredded Parmesan Cheese
  • 2 or 3 Vine Ripened Tomatoes
  • 1 Bag of 3-Count Romaine Hearts (this will make 5 or 6 salads for 2 adults)
  • Any “Refrigerated” Dressing of your choice.. I usually try for oil and vinegar or make my own

If you don’t already have these items in your pantry … throw them in your cart:

  • Butter
  • Balsamic Vinegar
  • Extra Virgin Olive Oil
  • Sea Salt
  • Black Pepper Corns

Three Cheese Tortellini with Balsamic Reduction

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Three Cheese Tortellini with Balsamic Reduction

Ingredients

  1. 1 Package FRESH Buitoni Three Cheese Tortellini
  2. 1 6 oz bag of Shredded Parmesan Cheese
  3. 2 or 3 Vine Ripened Tomatoes
  4. 1 Bag of 3-Count Romaine Hearts (this will make 5 or 6 salads for 2 adults)
  5. Sea Salt
  6. Pepper

Instructions

    For the Pasta
  1. Fill a pot with water and turn on high until it boils
  2. Follow the directions on the back of the package
  3. For the Salad
  4. While you are waiting for the water to boil... chop the Romaine Lettuce and divide between bowls
  5. Cut the tomato(s) into wedges and put on top of the lettuce
  6. Season with Fresh Ground Sea Salt and Black Pepper
  7. Wait to dress until dinner is ready
  8. For the Balsamic Reduction
  9. After you make the salads... heat a large saute pan with 4 Tablespoons of Butter
  10. Turn the heat down to medium
  11. Let the butter melt and bubble and just when it starts to "brown" pull the pan OFF the heat
  12. Add 2 Tablespoons of Balsamic Vinegar and stir
  13. Add the cooked Tortellini to the pan and toss to coat
  14. Plate The tortellini and top with some grated Parmesan

Serve with a salad… slice of Baguette and a nice glass of WINE! CLINK!

What makes this a “QUICK” meal is the way you get ready and how you make it.

It doesn’t matter if you’re making this recipe or another… as long as you are prepared you can make anything quickly.

Get the pots and pans out that you are using for the meal and put them on the stove.

Get all of the ingredients out and on the counter… have your chopping board and knives out and ready.

Get all the plates and silverware out while you’re waiting too… Prep… Prep…Prep!

When the meal is read… you’re ready.

DING! Dinner is ready!
