What a fun week doing the CrockPotPalooza!! WOOHOO!

Day 5 in underway at Chez Quick and I’m busy in the kitchen!

Today’s menu is….

MEATLOAF & ROSEMARY POTATOES! YUMMO!

Who knew? Meatloaf in the CROCK POT!

I’m not actually making this for tonight because it’s FRIDAY!

And Friday is PIZZA night at my house! Gotta love that!

But I am making a double batch of this for the first time and I really can’t wait to taste it!

I’m going to serve the first one tomorrow (Saturday) so that means a lazy relaxing day all day.

No time to worry about what’s for dinner!

Just take it out of the fridge in the morning… plop it in the crock pot and enjoy the day!

The other one will go in the freezer for another no-brainer dinner!

How cool is that?

Plus….Everyone in my house Loooooovess meatloaf so there will be no arm twisting going on.

Just silence… and chewing! Ahhhhh music to my ears!

Yeah! That’s what I’m talking about.

Meatloaf & Rosemary Potatoes

Ingredients

    For the Meatloaf
  1. 1-1/2 lb. ground beef
  2. 1/2 cup bread crumbs with Italian seasoning
  3. 1 package onion soup mix
  4. 1 eggs
  5. 1/2 cup ketchup
  6. 2 teaspoons dry mustard
  7. 1 teaspoon coarse sea salt
  8. 2 teaspoons fresh ground pepper
  9. For the Topping
  10. 2 Tablespoons brown sugar
  11. 1/4 cup ketchup
  12. 2 teaspoons dry mustard
  13. For the Potatoes
  14. 1 lb quartered red potatoes
  15. 3 Tablespoons olive oil
  16. 1 Tablespoons rosemary

Instructions

  1. Combine all ingredients for meatloaf and form into a loaf pan.
  2. Pack it really well to ensure the meatloaf is firm and not mushy.
  3. Combine all ingredients for the topping and brush on top of the loaf.
  4. Place pan into a freezer bag and freeze.
  5. Place potatoes, olive oil and rosemary in separate freezer bag, toss well to coat and freeze.
  6. When ready, remove meatloaf from pan and place in bottom of crock pot (topping side UP)
  7. Put potatoes around edge of meatloaf and cook on low for 6-8 hours.
