Ready for the FREEZER Cooking Par-tay?

Honestly… I was FREEZER Cooking and Crock-potting … when Crock-potting wasn’t cool!

It all started back in 2003 when I saw a cool write up in Southern Living about a gal named Sharon Gray who cooked once a month!

GASP! OMG! I loved that idea!

But realistically… it didn’t make too much sense for me. I didn’t have any kids and I didn’t have a “need” to stockpile meals.

I was eating out every night and not caring about where my next meal was going to come from.

BUT… my FREEZER was STOCKED! LMAO!

Fast-forward 10 years… a couple of husbands… and 4 kids later…

Now… that bad boy is plugged in and COOKING at least 4 times per week.

For me… with a family of 6… there is NO OTHER WAY!

This is how I keep my sanity and how I keep the troops FULL and HAPPY!

OK… enough Blah… blah….bah….

Who want’s to get started?

There will be a total of 5 Crock pot/Freezer Meals … delivered 1 per day.

I’ll get you started with the first one… then you come back and visit me tomorrow for the next one… and so on.

Now… this is where you get to make a choice!

Everyone likes to have a choice … right?

I know I do!

You can make one dinner and the second bonus meal tonight or wait till I finish the week and have a FREEZER cooking party over the weekend.

Genius! Right?

Now I suppose you want the recipes!

Of course you do.

What more can you ask for?

No… I won’t cook it for you! LOL!

White Chicken Chili

Prep Time: 10 minutes

Cook Time: PT4 - 5H

Ingredients

  1. 1 Tablespoon EVOO
  2. 1 medium onion chopped
  3. 1 4 oz. can chopped green chilies, drained
  4. 2 teaspoon cumin
  5. 2 teaspoon chili powder
  6. 4 - 6 Chicken Breasts
  7. 2 cups chicken stock
  8. 1 teaspoon salt
  9. 1 teaspoon pepper

Instructions

  1. Place everything in the crock pot and cook on low for 4-5 hours.
  2. Place your second batch except chicken stock in large freezer bag, toss to coat and freeze for another night.
  3. When ready, place ingredients in slow cooker, add chicken stock .
  4. Remove chicken, shred & return to crock pot.

Notes

DOUBLE the recipe and put one in the freezer for another night.
