Mmmmmm! Sunday’s… I just love ‘em!

Sleeping in late… Coffee… Brunch!

And by sleeping in late I mean as long as the boys will let us.

I have to get up a dozen or so times to solve Lego thefts and breakup Jedi Sword fighting…

But I can jump back in bed… until the next commotion.

Then … I’m hungry and I’ll I can think about is a good “Eye-Opener”… mmmmm!

Yeah… that is what I’m talkin’ about.

Toasted Baguette  topped with Sharp White Cheddar Cheese…

Topped with a Sunny Side UP Egg…

Topped with Parmesan Tomatoes!

Holy Brunch Batman!

Who wants to make it??

OK… here’s how it’s done right…

Sunday Brunch Eye-Opener


  1. 4 slices of baguette
  2. 4 tablespoons EVOO
  3. 4 large eggs
  4. 8 Generous slices of Sharp White Cheddar Cheese
  5. 2 medium tomatoes chopped
  6. 1/4 cup Fresh Parmesan Cheese Grated
  7. Coarse ground sea salt
  8. Coarse ground black pepper corns


  1. Preheat oven to 350 degrees
  2. For the Baguettes:
  3. Place 4 baguette slices on foil lined cookie sheet
  4. Drizzle the baguettes with a generous amount of EVOO
  5. Put in oven while you do the rest of the steps
  6. For the Parmesan Tomatoes:
  7. Chop 2 medium tomatoes
  8. Put 2 tablespoons of EVOO in saute pan over med-high heat
  9. Add Tomatoes and sprinkle Parmesan cheese on top and season to taste with salt and pepper
  10. Let cook until caramelized and saucy (MMMMmmm!)
  11. For the Sunny Side UP Eggs:
  12. Add 2 tablespoons of EVOO to a non-stick skillet and spread with a paper towel
  13. Crack 4 eggs into the skillet being careful NOT to break the yolks
  14. Season with salt and pepper
  15. Turn on heat to HIGH
  16. Wait until the oil just starts to heat up and bubble
  17. Put 1 tablespoon of water in the lid for the skillet
  18. Turn the heat OFF
  19. Pour the water around the eggs and put the lid on
  20. Leave for exactly 1 minute
  22. Remove lid and you have PERFECT Sunny Side UP Eggs
  23. To Plate:
  24. Remove Baguette slices from the oven and put 2 on each plate
  25. Top each Baguette with 2 slices of Sharp White Cheddar Cheese
  26. Top with a Sunny Side UP Egg
  27. Top the eggs with the Parmesan Tomatoes
  28. Drizzle EVOO over each "Eye-Opener"

I learned how to make this when I was little. My grandma lived with us and couldn’t cook anymore.

The only person that she would let cook for her was … ME!

She would sit in the living room in her “grandma” chair and give me, in the kitchen,  instructions on how to do it exactly!

And I followed every step… just like she said.

After all… I didn’t want to upset grandma!!

French women have a mighty temper… especially when they are hungry.

I should know… LOL!!

You better believe those eggs were freaking PERFECT!
