Monday… Again?

Who hates to cook on Mondays??

Yep! Me too!

I have the day off today but I still hate to cook dinner on Mondays! LOL!

If you feel the same way, you know you do, just follow this Easy Peasy recipe and dinner will be ready in no time.

The best thing is there are only 5 ingredients! Actually 4 if you don’t make the rice!

See? No excuses!

High 5 to that!

Easy Peasy Crock Pot Chicken


  1. 4 - 6 frozen boneless skinless chicken breasts (depending on your family size)
  2. 1 pkg. (8 oz.) cream cheese, softened
  3. 1 can cream of chicken soup
  4. 1 package of "dry" Zesty Italian dressing seasoning
  5. Rice


  1. Turn the crock pot on LOW
  2. Stir the cream cheese, cream of chicken, and seasoning together in the crock pot
  3. Let it set for about 30 min so the cream cheese is soft enough to stir
  4. Put the frozen (I hate to touch RAW chicken) chicken in and cover with the mix
  5. Cook on low for 8 hours or until the chicken is cooked and fall-apart-tender

Serve with rice and green beans and the usual piece of baguette to sop up all that yummy-ness!

30 minutes before you are ready to eat dinner… start your rice.

You can make it on the stove… or if you’re lazy like me… pull out the rice cooker!!

Yeah BABY!! Perfect rice every time and NO BOIL OVER!!

If you have the day off like me… you can slack off all day without the guilt or expensive takeout!
