Bacon Jam Pin It

Ohhhhhh Martha Stewart! How I loved you in the 80′s!

Then… there was that incident and I fell out of love with you!

But…WAIT!

OOOOO MMMMM GGGGG I am in LOVE again!

BACON JAM!?

STFU!

Really… and you make it in the CROCK POT! What more can I ask for?!

Did I mention the BACON!!

OK… I’m calmed down.

Let’s make this… HURRY UP… IT’S BACON JAM!

Bacon Jam

Ingredients

  1. 1 1/2 pounds sliced bacon, cut crosswise into 1-inch pieces
  2. 2 medium yellow onions, diced small
  3. 3 garlic cloves, smashed and peeled
  4. 1/2 cup cider vinegar
  5. 1/2 cup packed dark-brown sugar
  6. 1/4 cup pure maple syrup
  7. 3/4 cup brewed coffee

Instructions

  1. In a large skillet, cook bacon over medium-high, stirring occasionally, until fat is rendered and bacon is lightly browned, about 20 minutes.
  2. With a slotted spoon, transfer bacon to paper towels to drain. Pour off all but 1 tablespoon fat from skillet (reserve for another use); add onions and garlic, and cook until onions are translucent, about 6 minutes.
  3. Add vinegar, brown sugar, maple syrup, and coffee and bring to a boil, stirring and scraping up browned bits from skillet with a wooden spoon, about 2 minutes. Add bacon and stir to combine.
  4. Transfer mixture to a 6-quart slow cooker and cook on high, uncovered, until liquid is syrupy, 3 1/2 to 4 hours.
  5. Transfer to a food processor; pulse until coarsely chopped. Let cool, then refrigerate in airtight containers, up to 4 weeks.

“Spread this savory bacon jam on bread for a holiday appetizer and send your guests home with a jar.”

DO.NOT.LISTEN!

She is CRAZY!

Get out a damn spoon and eat it straight out of the jar!

Use your finger… I DON’T CARE!

BUT… do NOT share this with anyone… perhaps your family… hide it from your friends!

Savor every bite!
