Best Meatballs Ever Pin It

It’s the weekend… and a three-day weekend to boot! WOOOOHHOOOOO!

I decided that I wanted to make some soup… and not just any soup!

Meatball soup! Mmmmmm!

Not to sound biased or anything… but these are the BEST meatballs EVER!

You make them in advance… then when you want them… they are waiting for you.

Use them in several different ways… soup… subs… pasta sauce…

Just make them and freeze them… it’s that easy!

So… you ready?

Roll up your sleeves…Let’s make some meatballs!


Best Meatballs Ever

Yield: 22 (medium sized)

Best Meatballs Ever


  1. 1 pound lean ground beef
  2. 1/4 cup chopped fresh parsley
  3. 2 garlic cloves, minced
  4. 3 tablespoons grated Parmesan cheese
  5. 1 tablespoon Italian dried breadcrumbs (I use Panko)
  6. 1 large egg, lightly beaten
  7. 1/8 teaspoon ground nutmeg (Shhhhh secret ingredient!)
  8. 1/2 teaspoon ground sea salt
  9. 1/4 teaspoon ground pepper


  1. Combine all of he ingredients in a large bowl and kneed to incorporate
  2. Shape into medium sized meatballs
  3. Arrange on a baking sheet and freeze for 1 hour
  4. Transfer to a Ziploc bag to use in recipes


Use the meatballs straight from the freezer to make Spaghetti and Meatballs, Meatball Heros, Meatball Soup, Meatball Pizzas... the list goes on.

** I use a small cookie "baller" from Pampered Chef to make uniform sizes... try it... works GREAT!
