The name says it all for this recipe … even the picky eater in my house eats this… no argument! LOL!

If you’ve never cooked a whole chicken before… don’t be intimidated…

You basically just put the chicken in the oven and set the timer. It’s really that easy!

Your house will smell amazing and your family will be staring through the oven window saying… “Is it done YET?!”

Be careful…. your family will want this again… and again… and again…

PS – This is a 2 FER dinner too…. but in a different recipe. SAVE The carcass when you’re done… we’re going to use that!

Winner Winner Chicken Dinner

Prep Time: 10 minutes

Cook Time: 2 hours


  1. 7 - 9 lb. oven stuffer roaster cleaned and patted dry
  2. 2 lemons quartered
  3. 4 sprigs of fresh rosemary
  4. 1/2 stick of butter softened (not melted)
  5. Coarse ground black pepper
  6. Coarse ground sea salt


  1. Preheat the oven to 425 degrees (I know that is hot... it's not going to stay that way)
  2. Place the cleaned and dry chicken on a roasting pan
  3. Insert the lemons and rosemary inside the chicken (if you're squeamish... close your eyes!)
  4. Use your hand to smear the softened butter all over the outside of the chicken.... MAKE IT THICK!
  5. Grind sea salt and black pepper all over the butter layer. DON'T SKIMP... this is where all the flavor comes from
  6. Place the roasting pan in the oven
  7. SET THE TIMER for 25 minutes
  8. After 25 minutes REDUCE the temperature to 350 and cook until the temperature reaches 170 degrees directly into the breast


**Make sure the chicken is thawed and at ROOM TEMP before starting** Total cooking time is around 2 hours depending on your oven and the size of the chicken. The initial HIGH HEAT start makes the skin super crunchy and locks in the moisture.... you will not believe how JUICY this chicken is.

Serve with mashed potatoes and green beans and even a nice slice of baguette. Mmmmmmm!

But wait… remember I said save the carcass?

Don’t throw it away… put it in a Ziplock bag and put it in the fridge for the next segment.
