Cilantro Lime Chicken with Corn and Black Beans Pin It

I always try to incorporate foods that I know my kids will want to eat without having to make them take a No Thank YOU portion!

What is a No Thank YOU portion?

It’s about 3 bites of anything they don’t want… just enough to say “NO”! LOL!

We, of course, feed our kids “KID FOOD” like nuggets and mac-n-cheese… but you can’t feed them that every day. Actually, you can… and you’d get the mother-of-the-year award for sure. And your kids would NEVER argue with you about “What’s for Dinner” … but what FUN would that be? :)

This recipe talks to kids and grownups and can be served so many different ways. We like to eat it “WRAP” style with soft tortillas, sour cream, cheddar cheese, salsa, and a little fresh cilantro on top. And when your kids try it … and you hear nothing but crickets because they are all chewing and guarding their plates…. everyone WINS!

Cilantro Lime Chicken with Corn and Black Beans


  1. 1 1/2 pounds chicken breasts
  2. Juice from 2 limes
  3. 1 bunch fresh cilantro, chopped
  4. 1 (16 oz) bag frozen corn
  5. 2 minced garlic cloves
  6. 1/2 red onion, chopped
  7. 1 can black beans, drained and rinsed
  8. 1 tsp cumin
  9. salt and pepper to taste


  1. Place all ingredients in a resealable gallon-sized freezer bag. Mix together and zip bag closed.
  2. When ready to eat, remove from freezer and thaw in fridge for 24 hours. Cook on LOW for 8 hours (or HIGH for 4 hours).
  3. Serve with tortillas and toppings such as with sour cream, guacamole, salsa, and cheese.
