Savory Beef and Vegetable Soup Pin It

This is one of those recipes that I love to make because it is a 2 FER!

What is a 2 FER?

It’s a meal where you cook once and serve twice!

YEP! How cool is That??

Way cool if you’re a busy mom (or dad) and you don’t want to think too much about “What’s For Dinner”.

You invest a little time while you’re actually prepping your daily meal and put half into the crock pot and the other half into a ziploc bag for another day. AWESOME!

SO…. Who’s IN??

I know I am… Here we go!

This recipe is enough for 2 servings (DUH! I just said that) so that means divide each ingredient below and put half in the crock pot and half in a  ziplock bag. Make sure to label the bag with the date, contents, and additional instructions listed under the ingredients.

  • SavoryBeefandVegetableSoup-1 Chop (1) Onion and Chop (2) Cloves of Garlic- Brown in Pan with 2 lbs Ground Beef- once cool divided between bag and crock pot
    (*Note… I leave my ground beef in larger pieces)
  • (4) whole carrots chopped
  • (4) celery stalks chopped
  • (6) Red Potatoes chopped
  • (1) can v8
  • (1) 28oz can diced tomatoes
  • (2) cups frozen green beans
  • (1) TBSP Worcestershire
  • (1) cup Beef Broth
  • (2) TBSP Parsley
  • (2) tsp Basil
  • (1) tsp Thyme
  • (1) tsp Fresh Ground Sea Salt
  • (1) tsp Fresh Ground Black Pepper
  • (2) TBSP Sugar

* SavoryBeefandVegetableSoup-2 Place in Crock pot with 1.5 cups of water and 15 oz Beef Broth. Cook on LOW 8 Hours.

Serve with a slice of baguette drizzled with Extra Virgin Olive Oil and a glass of Pinot Grigio … MMMmmmm!

Wasn’t that easy? Now the crock pot has your dinner going…. AND…. 1 other meal is going in the freezer for another night.

Now you’re cooking like a ROCK STAR! But no one has to know how easy it really is… you can take major props for this one.

Did I mention that I did two loads of  laundry while I was chopping and sauteing? Don’t hate… I love to multitask!
